A delicious combination of summer vegetables slow-cooked in extra virgin olive oil and topped with capers, basil and kalamata olives. 

Served at room temperature, this Sicilian speciality is enjoyed all through the summer with cous cous or with fresh bread. 

Ingredients: aubergines, peppers, onions, tomatoes, celery, olive oil, salt, olives, capers, vinegar and very little sugar.
